The first time I truly noticed chai was in my grandmother’s kitchen. She didn’t need a clock. The whistle of the pressure cooker and the bubbling sound of tea on the stove told her what time it was. Mornings smelled like cardamom and ginger. Evenings are like peace. No matter how rushed or noisy the world outside was, in her little corner, everything paused for chai.
And just like that, my chai story began.

If you think chai is just a drink, you probably haven’t had it the way it’s meant to be had. Chai is comfort. It’s a ritual. Then the British came, and with them came black tea plantations. But India had its own idea of how to enjoy it. Instead of sipping it plain and proper, we added spices, boiled it in milk, and turned it into a cup full of soul.

In quiet homes, parents call out, “Chai tayar hai!” and suddenly, the whole house comes alive.

Some drinks keep you going. Then there’s chai that makes you stay. It wraps around you like a warm shawl on a winter morning. It gives you something to hold when you don’t have the words. You cry over chai. You fall in love with chai. You meet old friends after years and say, “Let’s catch up over chai.” It’s in the way we ask, “Ek cup chai ho jaaye?” not because we’re thirsty, but because we’re human, and humans need stories, warmth, and something familiar.

Chapter Six: From Tapris to Cafés

Chai has evolved, sure. Now it’s served in cafes, in takeaway cups with cinnamon sticks poking out. There’s rose chai, turmeric chai, and oat-milk chai. Some purists roll their eyes. But maybe chai was never about being one thing. It was always about being everything, whatever you need it to be. Still, nothing beats that chai from a roadside tapri, where the breeze carries hints of dust, spice, and stories. Where strangers become friends, and silence feels safe. Because in those moments, chai isn’t just chai, it’s a connection.

The thing about chai is it never really ends. Even after the last sip, the story stays with you. It lingers in the back of your throat, in the folds of your memories, in the comfort of knowing that no matter where life takes you, chai will always be there waiting to be brewed, shared, and remembered.
